No acceleration CB350

I managed to start my grandfather's CB350 for the second time in 40 yrs (first time I started it was in 1996). It idles nicely and I'm getting fairly balanced pressure out of both pipes but could be better. But when I try to accelerate above 2000rpm the motor cuts out. If I try really slowly it could get it close to 2100rpm but it will quick cut out.
I've checked the gaps, put in new plugs, I'm getting spark through both and fuel lines are clear.
I'm not sure what the problem could be. When I started it in 1996 I was able to ride it around the streets and the problem didn't exist. I may have fiddled with something back then to cause it change, hence why I may have put it back in the garage but who can remember what they did in 1996!
Any suggestions for what I should consider? Not sure if it's electrical or fuel related. At this stage I'm hesitant to do a carb rebuild, if there are other things I can first check.

Sounds like it might be air related. Does the behavior change with the choke engaged? Does it sputter or die quickly? Have you rebuilt the carbs? It may be a clogged main jet.

Could be jets blocked in the carb? If its that long between starting it could be gummed up with old fuel

Update: I rebuilt the carbs following Brendan’s detailed YouTube video. Started first time! Hope to take it for its first ride this week after doing an overhaul of all the ageing parts.
